Why Food Is the Best Way to Understand a Country

You can learn more about a country from its breakfast than from its border.

A plate is a historical document

Chilli is not native to Asia; tomatoes are not native to Italy; the potato reshaped northern Europe in a century. Every national cuisine is a record of what arrived, when, and by whose hand. Reading a menu carefully tells you about trade, colonisation, migration and climate faster than most history lessons.

Geography sets the pantry

Coastlines produce cured fish; highlands produce grains and dairy; monsoon deltas produce rice and fermentation. Before culture, there is climate — which is why neighbouring countries with different terrain often eat less alike than distant countries with the same one.

Migration is the fastest ingredient

Diaspora kitchens rewrite cuisines in a single generation, and then send the new version home. Much of what the world now considers authentic began as an adaptation made far from the country it names — which makes food a living record rather than a museum piece.

Why we draw it
