The birthplace of rum, and one of the Caribbean's most confident food islands. Barbados cooks with fire, fish and a Friday-night crowd that fills the streets of Oistins until well past midnight.
Chapter One
Fish fry Fridays
The soul of Barbadian eating lives in Oistins on a Friday night. Grilled marlin, flying fish, dorado and prawns come off the coals with lime, hot sauce and a scoop of macaroni pie, eaten at long tables beside the water while a soca band works up the crowd.
The rest of the week is quieter but no less flavourful: cou-cou and flying fish for Sunday lunch, pudding-and-souse on a Saturday, cutters piled with ham and cheese from a rum shop on the way home.
Barbados runs on rum, flying fish and a very good Friday night.
