Chapter One
Mangú at daybreak
A Dominican morning smells of boiled plantains and butter. Mangú — green plantains mashed with olive oil and softened onions — arrives with the trio Los Tres Golpes: fried salami, fried cheese and eggs. It is heavy, honest, and eaten slowly with a small cup of dark coffee.
By lunchtime the kitchen has moved on to la bandera — white rice, red beans, stewed meat and a plate of ripe avocado. It is the everyday, weekday flag of the Dominican table, quiet and complete.
In the Dominican Republic, a pot of sancocho on the stove is an open invitation.

Chapter Two
The long Sunday sancocho
Sancocho is the great Dominican celebration dish — a slow stew of seven meats, root vegetables, corn and plantain, cooked until the whole house smells of it. It is a wedding dish, a Sunday dish, a rainy-afternoon dish. Nobody eats it alone.
Around it: a jug of morir soñando (orange juice and milk, sweet and cold), a small plate of tostones and, later, a cup of Dominican coffee taken on the porch as the light softens.

Chapter Three
For the porch and the beach house
A plate of tostones, a merengue on the speaker, salt on the skin from a day at Playa Rincón — the Dominican collection is made for that whole Caribbean rhythm.
