Chapter One
A quiet Caribbean crossroads
Aruba's kitchen is a soft blend — Dutch pantry staples, Venezuelan corn arepas, Portuguese salt cod, and West-African stews that arrived long ago and never left. On any given evening, a plate might carry keshi yena, plantain, and rice with pigeon peas — a family of flavours that only makes sense together on this particular island.
The rhythm here is unhurried. Fishermen come in at dawn with mahi-mahi and red snapper. By dusk the coals are lit, and long tables appear along the water for pescado a la parrilla and cold Balashi.
The best cooking on Aruba happens outside, near the water, when the trade winds finally soften.
