Chapter One
The Spice Isle and its one-pot heart
Grenada is small and green and improbably fragrant — nutmeg, mace, cinnamon and clove grow in the hills, and by the time you reach a village the air already smells of the kitchen.
The national dish is oil down: salted meat, breadfruit, callaloo, dumplings and turmeric-yellow coconut milk, simmered together in one heavy pot until the liquid is gone and every ingredient has taken on the flavour of the last.

Chapter Two
Cocoa tea, reef fish and the long island afternoon
Breakfast is cocoa tea — hand-rolled Grenadian cocoa grated into hot water with cinnamon, nutmeg and bay leaf. It is more spice-cabinet than beverage, and it sets the tone for the day.
By lunchtime the beach vendors are grilling snapper and lambi over coals, roti stands are folding curry into fresh dough, and a rum shop somewhere is pouring the first Clarke's Court of the afternoon.
