Vol. 65 — Citrus at Noon, Anticuchos after Dark

Peru

From Lima's markets to the Andean table

Scroll ↓

Standfirst

Ceviche while the Pacific morning is cool, ají ground into every shade of heat, anticuchos after sunset. Peru's table is shaped by coast, mountain, migration and a remarkable instinct for balance.

Chapter One

Lima, before the ceviche hour

The city begins at the market: fish arriving from the Pacific, limes cut open, red onion rinsed and ají measured by instinct. Ceviche belongs to daylight, made and eaten while everything is at its brightest.

Lima's food is a record of encounters — coastal ingredients, Andean harvests, Chinese-Peruvian chifa and Japanese-Peruvian Nikkei — absorbed into everyday cooking rather than held apart.

Chapter Two

Ají, causa and the careful balance

Causa turns yellow potato, ají amarillo and lime into cool, clean layers. Anticuchos meet the flame after dark. Ají de gallina is gentle and deeply savoury. Each dish balances heat with acid, softness with crunch.

That balance is what makes Peruvian cooking so distinctive: vivid ingredients, held with restraint, and a confidence built through repetition at home.

Chapter Three

Chifa evenings and the family kitchen

Lomo saltado arrives from the wok with tomato, onion, soy, rice and fries — unmistakably Peruvian and inseparable from chifa history. At family tables, dishes change by household, but the gestures remain: tasting the ají, passing the plates, saving the recipe by cooking it again.
