Nihari simmered through the night and eaten at first light. Biryani layered for a full table. Kebabs turning over charcoal, chai poured at every hour. Pakistan cooks slowly and shares generously.
Chapter One
Lahore, before the heat arrives
Breakfast in Pakistan is not a small meal. Nihari has been on the stove since the night before, its beef falling apart into spiced gravy, served with naan and a squeeze of lemon. Beside it come halwa puri, paya for those who need the weekend properly started, and chai in glasses poured strong with milk.
This is a kitchen of patience. Onions are browned slowly, whole spices are bloomed in ghee, and stews are left long enough that the cook stops watching them. Nothing here is rushed except the eating.
Biryani is never cooked for one. The pot decides how many people the evening will hold.

Chapter Two
Charcoal, rice and the shared pot
Karachi's evenings belong to the grill: seekh kebab pressed onto skewers, chapli kebab flattened wide in Peshawar style, chicken malai tikka creamy from its yoghurt marinade, bun kebab handed over wrapped in paper.
Rice carries the celebrations. Biryani is layered with saffron and fried onions; pulao is quieter, subtler, everyday. Haleem is stirred for hours into a smooth mash of wheat, lentils and meat — food that belongs to a crowd, not a plate.

Sweet endings and endless chai
