A bowl of rice, a bowl of soup, three small dishes. Sashimi cut with reverence, ramen slurped standing up, matcha whisked until the room goes quiet. Japan feeds people one season at a time.
Chapter One
Ichiju-sansai — one soup, three dishes
The Japanese meal has a grammar older than any restaurant: rice at the centre, miso soup beside it, and three small dishes arranged around them. Nothing dominates. Nothing is wasted. The plate is a composition rather than a portion.
Precision here is not fussiness — it is respect. A cucumber sliced thinly enough to bend, dashi drawn from kombu and katsuobushi in the time it takes for water to shiver, rice rinsed until the water runs clear. The technique disappears into the eating.
Japan does not ask a dish to be more than it is. It asks it to be exactly, quietly itself.

Chapter Two
Rice, raw fish and the noodle hour
Sushi begins with rice, not fish — seasoned with vinegar, held at body temperature, pressed with a hand that has done it ten thousand times. Nigiri, maki, temaki and sashimi are all variations on the same restraint. Beside them: soy, a pinch of wasabi, and nothing else.
Then the noodles. Tonkotsu ramen thick with pork bone, shoyu ramen clear and salty, miso ramen darker and sweeter. Soba eaten cold with dipping sauce in summer; udon thick and chewy in a warm broth when it rains. Standing counters, ten minutes, no conversation required.
