An island kitchen built on small plates and long nights — beef noodle soup at a corner counter, oyster omelettes at Shilin, and a cold cup of bubble tea in the humid Taipei afternoon.
Chapter One
A kitchen of small, perfect plates
Taiwanese cooking lives at the small-plate scale — xiao chi, or 'small eats'. A bowl of lu rou fan (braised pork on rice) at a wooden counter, a paper cup of stinky tofu at Shilin market, an oyster omelette from a metal griddle, a xiao long bao steamed to order at Din Tai Fung. Nothing is heavy on its own, and everything adds up to a long, grazing evening.
Above it all sits the great bowl of beef noodle soup — hand-pulled noodles, dark aromatic broth, tender shank, a scatter of pickled greens — the dish Taiwan defends as its own.
In Taiwan, you don't eat one thing. You eat twelve small ones, and you keep going.
Chapter Two
For the night market and the small apartment
A cup of bubble tea, a paper tray of gua bao, a bowl of shaved mango ice — the Taiwan collection is made for that whole neon-lit, small-plate island rhythm.
