Chapter One
Rice is the anchor
In Liberia, the day is measured in bowls of rice. Palava sauce with palm oil and greens. Pepper soup with catfish that clears your head. Cassava leaf simmered slowly with smoked meat and bitterballs. Everything comes over rice, and the rice keeps coming as long as there is anyone at the table who hasn't finished.
The kitchen is unfussy but deeply flavoured — every pot benefits from a spoonful of palm oil, a small handful of hot pepper, and a lot of patience.
In Liberia, the pot is always big — because someone will always come by hungry.
