Liberian food starts with rice — long-grain, buttery, and served with almost every meal. Jollof rice, cooked down with tomato, onion, pepper and a whisper of smoke, sits at the centre of Sunday lunches, weddings and family reunions. Alongside it comes fufu, the soft, pounded cassava dough eaten by hand and dipped into rich, spoon-coated soups.

This is a kitchen built on generosity. Plates are heaped, sauces are shared, and the pot is always big enough for one more chair at the table.

Palm butter soup — thick, orange-red, and deeply savoury — is Liberia's soul dish. Simmered from the fruit of the palm with fish, chicken or beef, chili and country spices, it turns rice into a full meal in one ladle. Pepper soup brings heat and clarity: a fiery broth with goat or fish, drunk slowly at the end of a long day.

Cassava leaf, finely pounded and stewed with palm oil, smoked fish and meat, is the everyday classic. Every Liberian household has its own version, and every version tastes like home.

Liberian street food is quick, sweet and satisfying. Kala — small, spiced doughnuts — are sold hot from the pan for breakfast. Fried plantain, roasted corn, kanyah (peanut and rice sweets) and grilled fish appear on roadsides from Monrovia to Ganta, wrapped in paper and eaten walking.

Coconut, ginger and hot pepper run through everything. Even a snack in Liberia carries the warmth of the whole cuisine.
