Onions softened in lard until sweet, then pulled off the heat before the paprika goes in. A pot left to murmur all afternoon. Sour cream stirred in at the very end. Hungary cooks with patience, colour and an unmistakable red warmth.

Chapter One

The pot that is never hurried

Hungarian cooking begins with onion and lard, softened slowly until sweet, then taken off the flame so the paprika can bloom without turning bitter. That single gesture — heat, pause, paprika — is the country's culinary signature, and everything else follows from it.

From there come the great slow dishes: gulyás, a soup rather than a stew, with beef, potato and caraway; pörkölt, thicker and darker, spooned over nokedli dumplings; paprikás csirke finished with a swirl of sour cream. None of them can be rushed, and none of them are meant to be.

Paprika is not a spice here. It is a colour, a temperature and a way of remembering.

Chapter Two

Market halls and lángos steam

Budapest's Nagyvásárcsarnok opens early: strings of dried paprika hanging in ropes of red, barrels of pickles, slabs of smoked bacon, jars of Túró Rudi and honey from the plain. Upstairs, lángos comes out of the fryer golden and blistered, rubbed with garlic and buried under sour cream and grated cheese.

Outside the city, the rhythm continues in a different key — bogrács kettles hung over open fires, halászlé fish soup blazing with paprika on the Danube and Tisza, and wine cellars cut into the hillsides of Eger and Tokaj.
