Chapter One
A pot that everyone shares
The heart of a Congolese meal is the shared pot. Cassava leaves — saka-saka or pondu — simmered slowly with palm oil, smoked fish and a little chilli, then eaten by hand with a ball of fufu or a scoop of rice. It is a dish that asks you to sit down, take your time and reach in with the people around you.
The river is the pantry. Tilapia and capitaine come in fresh, salted or smoked. Plantains fry to a deep gold. Peanut sauces bind everything, and a small glass of palm wine — kai-kai — closes the evening.
The Congolese pot is not divided into portions — it is divided into hands.
Chapter Two
Kinshasa, evening
As the sun drops over the Congo river, Kinshasa's streets fill with the smell of grilled brochettes, fried plantain and freshly cut pineapple. Live rumba drifts from a nkumu bar. A plate of chikwangue and moambe chicken lands on the table, and the evening slowly settles in.
The cooking here is patient — sauces reduced for hours, fish smoked over open fires, cassava dough wrapped in banana leaves and steamed until it tightens into a soft, tangy loaf.
