A pot on the hob since morning. Bread that needs no proving. Oysters straight off the Atlantic and a pint thick enough to be called liquid bread. Ireland feeds people who have come in out of the weather.
Chapter One
Good things, plainly cooked
Irish food is built on excellent raw materials and very little fuss — grass-fed beef and lamb, butter the colour of egg yolk, potatoes in a dozen guises, and some of the cleanest shellfish in Europe.
What holds it together is warmth. Irish stew seasoned simply, coddle layered in a pot until everything softens, beef and Guinness stew darker and richer, and a roasted leg of lamb that still marks a proper Sunday.
There is no weather in Ireland that a bowl of stew and a slice of buttered soda bread cannot answer.

Chapter Two
Bread, breakfast and the full plate
Soda bread needs no yeast — buttermilk and bicarbonate do the work — and it arrives dense, faintly sweet and perfect for mopping a bowl. Barmbrack is studded with fruit, blaas are soft and floury, scones come split and jammed.
The full Irish breakfast is the country's most confident plate: eggs, sausages, rashers, black and white pudding, tomato, beans and bread fried in what is left in the pan — with tea, always, and plenty of it.
